Danielle Aotearoa Arsenault (born September 29, 1981) is a Canadian plant-based chef, educator, author, public speaker and TV personality.

She graduated with a Bachelor's Degree in the Master of Teaching Program in Education in 2006. She received her certificates in Permaculture Design, Living Foods Lifestyle Education, and a 200-hour Raw Food Educator Program.

Arsenault worked as a Spanish teacher, a musician, a rock climber and cave guide. While her career spans a myriad of skills, her main focus health and nutrition.

She worked as a professor and taught Holistic Nutrition Cooking, Superfoods and Whole Foods Preparation classes and served as a raw food chef consultant.

Arsenault founded Pachavega Living Foods Education in 2013. Pachavega Living Foods Education offers whole, raw, and plant-based services to its clients. Pachavega provides catering, nutritional consultation, and educational services. Arsenault also wrote books and articles dedicated to the plant-based lifestyle.

She was chosen as an ambassador for health and nutrition products and philanthropic advocacies. She was also chosen as one of Canada's Top Vegan Influencers....[1]

Her knowledge in health and nutrition paved the way for her public speaking career. She was invited by Bastyr University, The Real[2] and TEDx[3] as a resource speaker and interviewed by various radio stations and podcasts to talk about health and the plant-based lifestyle.

Arsenault is also creator, host and producer of a travel, food, health and lifestyle TV show called Heal and Ignite Across Canada.[4]

Early life[edit]

Arsenault was born on September 29, 1981, in Saskatchewan, Canada. Born to parents Theresa Anne Guthrie Arsenault and Robert ‘Bob’ Arsenault. She has three siblings, Lauren, Marinna, and actor, Alexander Arsenault.

Arsenault grew up in the small towns of Gull Lake and Wadena. By the time she was in first grade, her family had moved to Regina, Saskatchewan which their family called home for the majority of the 90s.

She moved to Calgary in 2001 to finish University. She then lived in Mexico from 2006 to 2008, and South Korea from 2008 to 2012. Since then, she has called Canmore, Alberta home.

Education[edit]

Arsenault completed elementary school and high school in Saskatchewan. She then attended the University of Calgary in 2001 where she completed her Bachelor's degree in Fine Arts in 2004 and Bachelor's Degree in the Master of Teaching Program in Education in 2006.

Arsenault received a Permaculture Design certificate from Sadhana Forest in Haiti, a Living Foods Lifestyle Education certification from the Ann Wigmore Institute in Puerto Rico, and became a certified Raw Food Chef and then completed the 200-hour Raw Food Educator Program from Raw Foundation Culinary Arts Institute in Vancouver, British Columbia.

Career[edit]

Arsenault is a raw food chef and educator, but she has been interested in a multitude of careers even from a young age which brought her in different parts of the world. She lived a significant amount of time in Mexico and South Korea. She also has visited over 20 countries including Central and South American countries like Peru, Costa Rica and Nicaragua.

Teaching[edit]

Having lived in Central and South American countries, she’s adapted to the native tongue of the region and speaks fluent Spanish. She worked as a Spanish Teacher[5] for the Canadian Rockies Public Schools in Bow Valley.

Music[edit]

Raised in an artistic household, she’s always been interested in music and completed a ukulele-infused album in March of 2012 under her pseudonym Mustache Fable.

Outdoors[edit]

Arsenault enjoys adventure and the outdoors. She is a mountain lover and tackled cliffs and boulders as a rock climber since 2006. She has climbed numerous terrains in Canada, the US, Mexico, Spain, Turkey, Thailand, Hong Kong and South Korea. Arsenault also worked as a cave guide for Canmore Cave Tours in Canmore, Alberta from 2013 to 2015.

Health and nutrition[edit]

Her interest in health and nutrition dates back to her teens when she decided to be a vegetarian. After 8 years, she transitioned to strictly a plant-based diet, eliminating all animal products in a boycott of a cruel and unsustainable industry. It is her advocacy for health and nutrition that became the force propelling her forward into pursuing her passion and career in the niche.

With her Permaculture Design, Living Foods Lifestyle, and 200-hour Raw Food Education certificates, she became a professor at Pacific Rim College in Victoria, BC in 2012. There, she developed and taught Holistic Nutrition Cooking, Superfoods and Whole Foods Preparations classes.

She then worked at the Aqua Wellness Resort in Nicaragua as a raw food chef consultant in 2016 and developed new healthy menu items for their wellness menu as the resort's restaurant guest chef.

Arsenault founded Pachavega Living Foods Education in 2013 to inspire people to take charge of their wellness through food.

Etymology[edit]

The name Pachavega is derived from two words – Pacha and Vega. “Pacha” comes from the word “Pachamama”, a native word of the indigenous Quechua peoples from South America which means “Mother Earth”. “Vega” is for vegetables. Pachavega prepares organic, plant-based whole foods with mindfulness and is committed to sustainability and compassion for the earth and all things on it.

Services[edit]

Pachavega Living Foods Education offers catering, nutritional consultation, workshops, retreats, and raw food chef certification courses. Pachavega offered the 70-hour Heal and Ignite Raw Chef Certificate and a 45-hour Healing Foods Preparation Certificate until the Spring of 2018.

Effective Summer 2018 onwards, Pachavega revamped their courses and is offering a one-week Basic Raw Food Chef Certification Course and a one-week Advanced Raw Food Chef Certification Course.

Pachavega’s courses have been approved by the Canadian Association of Holistic Nutrition Professionals (CAHNPRO) for upgrading hours and continuing education credit units (called CEU’s by doctors, naturopaths, etc.). Pachavega courses have also been recognized by the Canadian School of Natural Nutrition (CSNN) for graduates and current students to receive external practicum hours.

The Kitchens of Pinch and Dash Series[edit]

Living in Korea from 2008 to 2012, Arsenault was immersed in the health-friendly culinary traditions of the country. There, she met Jessica Perlaza, with whom she wrote and published a gluten-free and vegan cookbook series. The duo is known by the pseudonym, the Kitchens of Pinch and Dash. The series is inspired by whole foods, as they are available by the seasons. The e-books are available to the public for free.

Heal and Ignite[edit]

Arsenault published her first solo-project recipe book, Heal and Ignite: 55 Raw, Plant-Based, Whole-Food Recipes to Heal Your Body and Ignite Your Spirit in January 2017.[6]

The book contains raw, whole, plant-based food recipes and provides information about the different ingredients used in the recipes and its nutritional value. It is available in hardcover, paperback and e-book formats.

Heal and Ignite Across Canada[edit]

In this TV show, Arsenault will travel across Canada in search for some of the best-kept culinary and health secrets, and wisdom that have been passed through generations that hold the key to the vigor and longevity of our ancestors.

Traditional and indigenous cuisine will be deconstructed, updated and remixed into an original, plant-based, whole, raw food interpretation with flavours that is bound to appeal to the palate of both the young and old, the indulgent and the health-conscious, and everyone in between.[4]

A travel, food and lifestyle show, it started filming on May 2018. Public release is to be announced.

Merit and distinction[edit]

In 2016, Arsenault was chosen to become an Ambassador for Journey. Journey is an organization that helps people to see the impact they've made through philanthropic donations. Volunteers travel in different countries and get involved in various projects that can improve the lives of the locals.[7][not in citation given]

In 2017, Arsenault became the first female ambassador for Salome Naturals Moringa[8]

Arsenault was invited as a resource speaker for The Real in Los Angeles, CA in July 2017. There she gave a talk about the benefits of the what is dubbed as the Miracle Tree, Moringa. She provided ways this humble yet powerful tree can single-handedly eradicate hunger and malnutrition in impoverished countries.[2]

In September of 2017, Impact Magazine released their list of Canada's Top Vegan Influencers where Arsenault was nominated and named as one.[1]

Within the same month, Arsenault gave her first TEDx Talk for TEDxAbbottsford. She joined trailblazers from different niches and backgrounds, sharing their passions and ideas. She discussed the power of plants zeroing in on three ancient superfoods.[3][9][10]
