Pea cake

The pea cake is a kind of Beijing snack which is often made and eaten in Spring. In Pinyin, it's called Wan Dou Huang. The pea cake is made by sugar and pea and has a long history.

History[edit]

The pea cake was cooked by families along the Yellow River before Ming Dynasty and first brought to Beijing in early Qing Dynasty. From then on, the pea cake became a famous Peking snack. There was a saying goes, "Yanjing's (the old name of Beijing) snack is always the best, and the pea cake is the best among them. Jujube inlays in the yellow piece. Ten coins in return for a yellow jade." After introduced into the royal palace, and improved by the royal cooks, it became an essential snack on the emperor's table. Empress Dowager Cixi had a special affection to pea cake. In February 1972, Prime Minister Zhou Enlai assigned the pea cake to the first dessert on the state banquet reception for the U.S. President Nixon.

  • peel the pea by stone mill
  • wash it by water and steep in water 3 times
  • add some baking soda and stew in copper pot
  • filter out impurities, add sugar, and parch by wooden shovel in pot
  • pour into a box, cover a paper and dry it
