Rodizio Grill is a Brazilian Steakhouse restaurant or Churrascaria that was established in the United States. It was established in 1995, the first to be established in the United States, [1]by Founder and President Ivan Utrera, a native Brazilian born in São Paulo. [2] Currently there are 23 locations in the United States

History[edit]

In the early 1900s, large groups of Europeans, including Germans, Spaniards, Italians and Portuguese, migrated to southern Brazil, chasing new dreams and seeking to take advantage of the abundant and fertile lands. They colonized a region in southern Brazil called "The Pampas," flat, fertile grasslands, ideal for cattle ranches. A tradition was soon born where gauchos, Brazilian cowboys, would dig large holes in the ground and light up fires for cooking their meats. These holes helped keep the fires burning and hot even when the plain winds were blowing hard, as they often do. Soon this cooking method, became the centerpiece of large gatherings of family and friends, turning these events into true feasts. As population centers grew, restaurants started providing the same banquet style, high-quality, abundant meals. Rodizio Grill Founder Ivan Utrera grew up enjoying that traditional churrasco (barbeque) style of dining derived from southern Brazil; Utrera's love of the traditional Brazilian "churrascaria" (steakhouse) coupled with the need for a traditional Brazilian steakhouse in the United States compelled Ivan to develop the Rodizio Grill concept in 1995.

Menu[edit]

Rodizio Grill offers unlimited dining, with the rotisserie grilled meats and items carved tableside. Brazilian appetizers are served in abundance directly to the table. The gourmet salad area includes over 35 fresh vegetables, fruits and salads to accompany the rotation of grilled meats. As tradition at Churrascarias in southern Brazil, a cue is placed at each table, which the customer can turn to "green" when ready for the gauchos to bring the meats to the table. Customers turn the cue to "red" when desiring a break for the grilled items. A selection of homemade Brazilian desserts is also offered. Much of the menu is gluten-free.[6] The restaurants hosts a variety of events throughout the year including Bacon Fest [7] and Wild Game Fest [8]

Community Involvement[edit]

Rodizio Grill supports Image Reborn Foundation [29] which helps breast cancer survivors by providing weekend retreats to breast cancer survivors at no cost to participants. [30]. Rodizio also supports Bruno Carneiro, s a Brazilian-American racing driver and the 2016 China Formula 4 champion. [31] [32] The local restaurants support a variety of local charities and nonprofits. On a local level, Rodizio locations will host fundraisers to support community needs.[33]
