Aspen Distillers is a distilled spirits manufacturing company headquartered in Aspen, Colorado. Aspen Distillers is privately owned by Five Points Company LLC, Colorado which was originally founded by an Ohio emergency physician, Matthew Patel.[1] Aspen Distillers’ namesake vodka, Aspen Vodka was first introduced to the market in 2021 at the Food and Wine Classic in Aspen (9). Aspen Distillers operates a proprietary continuous column still with a manufacturing capacity above the industry category for a craft distillery defined as greater than 40,000 cases annually by the Distilled Spirits Council of the United States. (DISCUS). The company has not reported sales volumes.

Aspen Distillers was established in 2019 in Aspen, Colorado and is the first and only distillery in Pitkin County.[2] The distillery's manufacturing focuses on sustainable and regenerative practices. The distillery is  LEED Platinum Certified [3] and the first distillery in the world designed to meet all the requirements of the International Living Future Institute's Living Building Challenge.[3] The company is also currently undergoing certification for Positive Luxury's Butterfly Mark.[4]

Production[edit]

The 18,000-square-foot distillery will be fully electrified, operate exclusively with onsite renewable energy, and be carbon negative.[5] Fully automated controls regulate delivery of steam on demand from the custom engineered electrode boiler from Precision Industries that is 99%+ efficient.[6]  To produce the distillate, a proprietary non-GMO, single estate Red Winter Wheat is harvested in Colorado, milled by the Aspen team, mashed, fermented and distilled to its final form in a single pass.[7] Aspen Distillers reports 100% traceability of its Red Winter Wheat. All of the process water is sourced from the Roaring Fork River Aquifer, and the wastewater is treated onsite and used for irrigation or returned to the river.[1] Aspen Distillers uses Aquacycl's BioElectrochemical Treatment Technology (BETT) for wastewater treatment. The energy-neutral, onsite wastewater treatment treats the effluent – or wastewater– without carbon emissions and provides improved water quality and quantity to the Colorado River Basin.[8]

Agriculture[edit]

Aspen Distillers utilizes regenerative agricultural practices and dedicates 4 acres at the distillery site to local food production.[1] Among other benefits, the regenerative practices reverse climate change by rebuilding the soil's organic matter and restoring degraded soil biodiversity, resulting in both carbon drawdown and improvement of the water cycle. The distillery also partnered with the Aspen Center for Environmental Studies to use nutrient rich sediment from a lake restoration project for a sustainable soil amendment for the distillery's property .[9]
