Bakso Balungan is one type of Bakso (Indonesian meatball) dish that adds balungan ("bone" in Javanese) when serving it. Balungan Meatball is one of the culinary specialties of Central Java. In the beginning, Balungan meatballs emerged from the Soto buffalo business, which is the hallmark of soto in the Demak, Kudus, Pati and surrounding areas. If buffalo meat is widely used for soto and Rawon, the bones are used for meatball mixture.[1]
Etymology
Named balungan meatballs (bone) because the meatballs that are served are not merely meatballs (Bakso), rolled meat rolls that are given soup. This one meatball is compressed with pieces of bones that are still wrapped in sliced meat.
Serving
The pleasure of Balungan meatballs does not lie in the meatballs themselves, but in the way to enjoy and eat away the meat fragments on these pieces of bone, which is exciting and often makes connoisseurs of meatballs addicted. The sensation of eating while looking for meat that is still attached to the side of the bone served, if lucky, will get marrow from the bone.
