Chiho Kanzaki (神崎 千穂, Kanzaki Chiho) is a Japanese chef working in Paris.
Kanzaki was born in 1979[1] and grew up in Fujisawa, becoming interested in cooking as a child watching her father butchering and preparing meals.[2][3] She studied at Tsuji Culinary Institute in Osaka.[3]
In 2006 at the age of 20 she moved to France to study French cuisine, worked at Manresa and then with Jean-Paul Jeunet, and eventually started working at three-Michelin-starred restaurant Mirazur, spending seven years there.[3][4]
In 2016, Kanzaki opened Virtus, in Paris's 12th arrondissement with her partner, Marcelo Martin di Giacomo; in 2019 it received a Michelin star.[2] The restaurant offers a unique experience as the sushi rolls are made in front of the diners by Colombian-Japanese chef Andres Ramirez.[5][better source needed] By 2022 the couple had left Virtus.[6]
Kanzaki has been influenced by various mentors throughout her journey of becoming a chef. Her favorite breakfast is a Japanese breakfast with rice, grilled fish and miso soup. If she could find out anyone's secret recipe, it would be Kansai Yamamoto's costume designs for David Bowie in the 1970s. Chiho Kanzaki is a Japanese chef who has been working in France for over 20 years . Kanzaki has been mentored by several chefs throughout her career, including the renowned French chef Alain Ducasse. She has also worked with other notable chefs such as Pierre Gagnaire and Michel Bras. Kanzaki is known for her creative approach to cooking, combining traditional Japanese flavors with French techniques.[citation needed]
