Israeli style hummus is the chef Michael Solomonov's version of hummus, served in his Philadelphia restaurants and described in his cookbooks.
Texture[edit]
The texture of Solomonov's hummus has been likened to buttercream;[1][2]
Solomonoff's "hummus tehina", served at his Philadelphia restaurants Zahav and Dizengoff has been called the "most-talked about recipe"[3] and was called Bon Appétit's "2015 Dish of the Year":[4] "the creamiest, dreamiest hummus".[5]
