Jeff Sebastian (born Canadian retired professional ice hockey defenceman. He was drafted in the sixth round, 115th overall, by the Winnipeg Jets in the 1991 NHL Entry Draft.

Born in Regina, Saskatchewan, Sebastian began his professional career in 1992 with the Louisville Icehawks in the ECHL. He also played for the Saint John Flames in the American Hockey League before he went to Europe in 1996 where he played for various clubs in the United Kingdom, Germany and Italy. He was a member of the Grand Slam winning Sheffield Steelers team in the 2000–01 season.
