José Enrique Montes (born May 28, 1977) is a Puerto Rican chef, humanitarian, entrepreneur, restauranteur, and father. He is known for elevated Puerto Rican cuisine that applies classical French techniques and highlights local, natural, and organic products.
Background[edit]
Chef Enrique was born in Santurce, Puerto Rico.;[1] After high school he attended college for a short time, but upon the encouragement of renowned Puerto Rican chef Wilo Benet, Enrique moved to Hyde Park, New York and enrolled at the Culinary Institute of America.[2] After graduating from the CIA in 1998, Enrique worked in New York, Louisiana, and Florida before returning home in 2007 to Puerto Rico to open his first restaurant.[3] Since his return, Chef Enrique has owned and collaborated on several ventures and is continuing to work on new projects. He is a supporter of and promoter for Puerto Rican culture, including advocating for neighborhood revivalism through arts, culture and cooking. Currently, his namesake restaurant is in Condado - featured in Conde Nast Traveler.[4][5]
Awards and Recognitions[edit]
Enrique’s accolades are ever growing and distinguished. Chef Gordon Ramsey has called Chef Enrique a “culinary renegade” and referred to Chef Enrique as “Puerto Rico’s de facto culinary ambassador.”[6] A brief list of some of his accomplishments include: 2008-CondeNast Traveler magazine included Jose Enrique in its list of 105 best new restaurants; 2013, Food & Wine named Enrique among the “Best New Chefs”, a first for a Puerto Rican Chef. [7] Chef Enrique has also received his fair share of recognition from the James Beard Foundation, where he earned awards in the category of “Best Chef South”[8] for the years 2013, 2014 and 2016 and was otherwise nominated to the category in years 2015, 2017, 2018, 2019, 2020. In 2019 Jose Enrique’s Condado Restaurant named by Food & Wine and Travel + Leisure as one of the 30 “World’s Best Restaurants” around the world.[9]
Importance of Puerto Rican Food[edit]
Chef Enrique's style incorporates sustainable, locally sourced ingredients.[10] This is a concept instilled in him by his close-nit family including meal's served by his grandmother that often fed 20 or more relatives and food lessons taught from his father who Chef Enrique would follow from farm to farm, learning how peppers, mango or avocado grew.;[11] Enrique's focus on locally sourced food products drives his daily menu – a testament to his talent - as each day, the meals are dictated by the protein and produce available.[12]
Humanitarian Efforts[edit]
Chef Enrique was intimately involved in disaster recovery and relief efforts following 2017’s Hurricane Maria, which obliterated much of Puerto Rico. Enrique himself suffered from property damage caused by the storm, but despite losing windows, roof, and power, he found a way to service to local community by providing meals.[13] From his near-destroyed home he started making sancocho (local stew), rice, beans, and whatever else he could get his hands on.[13] Within a matter of days Enrique’s efforts drew the attention of José Andrés, the founder of World Central Kitchen, which first brought food to disaster areas in Haiti, following the 2010 earthquake.[14] Together, Enrique and Andrés led scores of volunteers, which ultimately provided more than 20,000 meals a day to survivors of the Hurricane.[[15]]
