Kaphrao Hoi Lai

Hoi Lai or Paratapes undulates, is a species of saltwater clam. It’s shape like an egg in brown color. When open, it’ll look like butterflie wings that have a wavy pattern outside but white inside. It’s one of the clam species that found in Thai Sea Boundary.

Kaphrao Hoi Lai(Thai: กระเพราหอยลาย) is a Thai traditional food that is made from clam cooked with Thai sauce and curry. Its original taste is spicy and sweet. It can be eaten with hot rice or sticky rice. This dish is very popular in night restaurants or vendors. The ingredients are clams , basil, chili, garlic, light soy sauce, oyster sauce, suga, rice bran oil (Kaphrao Hoi Lai, March 16, 2018) Since the number of clams has been increasing quickly in the past, this menu was created for a long time and still is a popular menu among Thai people and is loved for the foreigners who come to visit Thailand.

How to cook Kaphrao Hoi Lai

1.Boiled the clam until they open and get the clam meat clams are quickly boiled, so only 5-7 minutes is enough)
2.Select the basil and wash it with water and let it dry.
3.After clams are cooked, rest the clams it in the cool water for 10 minutes and bring them up and let them dry.
4.Smash the chili and garlics as many as you wish.
5.Get the pan on stove in the medium temperature then pour the oil into the pan.
6.Wait until the oil is boiling to cook chilli and garlic mixture then cook it together until it gives you a good smell.
7.Pour a clams in the pan and accelerate the fire to the maximum.
8.Season with oyster sauce, light soy sauce, and sugar
9.Put the basil in the pan and cook a little until all ingredients are mixed together then switch off the fire.
