Lviv Cheesecake
Lviv cheesecake (Ukrainian: Львівський сирник, romanized: Lvivskyi syrnyk), or syrnyk is a traditional Ukrainian dessert, one of the symbols of Lviv, and is ubiquitous in Lviv confectioneries.[1] The main ingredients are farmer's cheese, lemon or citrus, sugar and chocolate, often with candied fruit or raisins. It's served in almost every café in Lviv.
History
Lviv cuisine was formed largely under the influence of the Austro-Hungarian cuisine. The recipe of the Lviv Syrnyk is in many ways similar to the recipe for the Hungarian cheese strudel.
Lviv cheesecake became very popular after Ukrainian culinary specialist Daria Tsvek (1909-2004) introduced it into her book Solodke pechyvo ("Sweet Baking").[1] She wrote down the recipes of her mother and grandmother in her culinary diary.[1] The classic recipe from Tsvek includes starch and shredded boiled potato. This recipe is used by advocate of Ukrainian cuisine Yevhen Klopotenko. Modern adaptations include healthier substitutes such as allulose or erythritol instead of sugar.
Traditional ingredients include farmer's cheese, eggs, butter, vanilla, sweetener, citrus. Typically the cheesecake is glazed.
Nutritional value
A serving of the classic Lviv cheesecake is about 250 calories, while the modern one is about 150 calories.
