Olive salad is a chopped salad made from green olives, black olives, olive oil, celery, cauliflower, carrots, sweet peppers, onions, capers, parsley, pepperoncini, oregano, garlic, vinegar, herbs and spices. It is a "piquant salad" used as a spread to make the muffaletta sandwich, which is especially popular in and around New Orleans.[1] The celery, cauliflower and carrots are commonly found in the pickled form known as giardinera.[2] Capers and lemon juice may also be included.[3]

It is commercially produced for restaurants and for retail sale. Other types of olive salads are also used as side dishes for other Sicilian and Mediterranean meals, usually using whole pitted olives instead of chopped olives. Some are inspired by the muffaletta sandwich.[4]
