Perepechi (Script error: The function "langx" does not exist., singular: перепеч) are small Udmurt open-faced pies with various fillings, such as meat, vegetables, mushrooms, quark. They are a symbol of hospitality, a staple at celebrations, and a popular street food in Udmurtia.

Etymology

According to one theory, perepechi got their name because they are baked in front of the oven (rus. pered)[1]. Another theory claim that It derives from the ancient word peres'mon — which translates from Udmurt as "old age"— because the crimped edges of the perepechi resemble wrinkles. [2].

Preparation

Traditionally, the dough is made using rye flour (or a blend with wheat flour), eggs, and water or milk. The dough is shaped into small, round, bowl-like vessels approximately 10–12 cm in diameter, with the edges pinched to create an uneven, ruffled appearance. Fillings include meat, cabbage (both fresh and sauerkraut), potatoes, eggs, green onions, mushrooms, cottage cheese, and horsetail[3]. In rural areas, perepechi made with blood are also popular[4]. The fillings is often pour a mixture of eggs and milk over it.

In popular culture

At Eurovision Song Contest 2012, the collective from Russia Buranovskiye Babushki (Udmurtia) featured a model of a traditional Russian stove on stage and baked *perepechi*—a traditional Udmurt dish— during their performance[5].
