She built the "Louis Arieli Photography Laboratory"[3] At Beit Biram, the upper division of the Reali School in Haifa and operated it from 1975 to 1982. At the request of Professor Simcha Nahir and Dr. Yitzhak Shapira, the school's principals, the laboratory was the basis for the high school's communication studies. Gitai was a teaching assistant to the photographer Yosef Cohen, as well as a student of Aryeh Rotman (engraving), Dina Merhav (graphic design), Professor Emanuel Zeltzer (drawing) and was greatly influenced by the research of Prof. Avraham Kamp, founder of the Department of Art and Judaism. Her master's degree included a thesis on the interrelationships between written and filmed children's literature and together with Prof. Aliza Shenhar researched folk literature. In 1977, she completed an art teacher training course in 1979 and a master's degree in curriculum planning in education. In the years 1982-1984 she studied for a doctorate in science teaching with Prof. Arie Perlberg and at the same time taught the subject of self-confrontation in video and produced and held exhibitions with students on visual communication and media language and illustrations in children's literature. Additionally, she studied Kabbalah Rabbi Yaakov Nissan Rosenthal.

In 1984 she moved to South Africa[5] [6]with her family and held exhibitions in both countries. In South Africa, she has also worked as an art consultant in building private and public art collections. During her stay in South Africa, she led the organic village where she taught and engaged in Brynston organic village market.[7] She is engaged in health counseling, natural medicine and homeopathy.[8]

In 1994, she was appointed director of the Art and Design Institute of Oranim College.[9] In addition, she also worked as a professional diagnostician in the behavioral sciences and specialized in body work versus mind and the integration of art as part of life and this is what her doctoral dissertation in behavioral sciences was written in 1995. Rachel Gitai's works are influenced by the golden age of Spanish Jewry and her research, the Code of Ilion (De ilion code) and the works of Renaissance artists. Gitai has developed various painting techniques.[13] Its oil works consist of layers of pure oil paints. She uses knife palette and techniques that create intense design compositions and colors. She draws most of her inspiration from the Zohar book and the twelve breastplate stones. Her works are also characterized by the use of sub-shades.
