Rainbow Bagel
A rainbow bagel is a variation of a traditional bagel. It is a bagel made with different colored dough twisted together to give the bagel a rainbow look. The rainbow bagel normally does not have flavors that differ from that of a plain bagel. The rainbow bagel was created by Scot Rossillo, owner of The Bagel Store in Brooklyn, NY. Although Rossillo created the rainbow bagel nearly 20 years ago in the nineties, it became an internet sensation in 2016. This increased popularity is largely attributed to the rise of social media.
How it's Made
Rainbow bagels are made in a multi-step process. First, regular bagel dough must be prepared, then separated into as many parts as colors are wanted in the bagel. For example, if the baker wants a bagel with blue, red, yellow, and purple, the dough must be separated into 4 parts. Each dough is then dyed a different color. The colored dough is stacked on top of each other, but into strips, and twisted. The twisted dough is then formed into the shape of a bagel and cooked normally.
Effects of the Bagel
The bagel shop used to be a small, local bagel store in Williamsburg, Brooklyn. It now brings in crowds so big that the line stretches all the way down the block. Instagram pictures and hashtags such as #RainbowBagel have driven crowds from all over to await the rainbow creation. According to the Washington Post[1], Williamsburg is an artsy neighborhood and the creativity and art used to create the rainbow bagel represents that. While many tourists love to wait in line to get their picture with the rainbow bagel, locals are not so happy about the influx of customers to their local bagel shop.

Since the birth of the rainbow bagel, bagel store owners are getting more and more creative with their rainbow designs. Shops like the Bagel Store have taken rainbow breakfast to the next level as they add on rainbow cream cheese, cream cheese infused with rainbow cake, rainbow sprinkles, cookies, and even glitter.
