Of the sources that I could access, only Ref. 2 discusses the subject in any depth at all, and this is an MDPI publication (see WP:MDPI.) The others are trivial mentions of WP:DICTDEF-level detail, or about other subjects entirely. We typically require 2 independent, significant sources that are reliable; at best, we have one. A steam jacketed kettle, or cooker, is a commercial or industrial cooking vessel used to heat, cook, mix, cool, hold, or concentrate food and other process materials. Industrial kettles are used in food processing[1] and agricultural processing at commercial and industrial scales. Smaller vessels are also used in laboratories, pilot plants, academic facilities, and product trials.
In a steam-jacketed kettle, the cooking vessel is surrounded by an outer wall that forms a jacket around part or all of the product-contacting surface. The steam operated pressure vessel may be unfired (using steam from an external boiler) or direct fired (with an internal, self-contained heating element). The generated steam is piped into the jacket space. When the steam contacts the cooler vessel wall, it condenses and releases heat through the wall to the product inside. Condensate is removed from the jacket so more steam can enter.[1][2]
The surfaces of heat transfer surfaces must be clear of obstruction for optimal heat transfer. Agitators or scrapers can be used to remove product product build up[3], and regular cleaning, non-corrosive materials, and boiler water additives can prevent or remove rust, scale, and water films. [4]
Some kettle designs can be modified to cook and chill in the same vessel, incorporating chilled water or vacuum.[5]
Vessel types
Jacketed kettles for food processing are usually described by their vessel shape, orientation, discharge method. Vessel shape and orientation affect mixing, heat transfer, and discharge. Many designs include agitators, scrapers, or mixers to keep products uniform, reduce buildup on heated surfaces, and move viscous or particulate products toward the outlet.[3]
A hemispherical kettle is a rounded, bowl-shaped vessel similar to a large round-bottomed pot with an agitator extending from the top to the bottom. It is often built as a stationary vessel with a bottom outlet or draw-off valve, allowing product to discharge by gravity.
A horizontal kettle is a cylindrical or trough-like vessel mounted on a horizontal axis. It often contains a ribbon, paddle, scraper, or other agitator that mixes the product and helps move it toward a discharge valve, door, or pump connection. Horizontal designs are often used for thicker or more viscous products that need mechanical movement during cooking or discharge.
A tilting kettle is similar in bowl shape to a stationary hemispherical kettle, but is mounted on a frame that allows the vessel to tip forward. The tilting action allows the contents to be poured or decanted rather than discharged only through a bottom valve.
A conical kettle has a tapered lower section that narrows toward a bottom outlet. The shape supports gravity discharge and is used where drainage or controlled discharge through a lower valve is needed.
Continuous cooking systems, also called screw cookers or thermal screws, also use steam jackets but operate differently than batch kettles. Ingredients or uncooked product enter one end of a heated vessel or processing chamber and are moved through the cooking zone by agitators, conveyors, augers, pumps, or other transfer mechanisms. Cooked product discharges from the opposite end.
Uses
Industrial kettles are used for cooking, heating, cooling, mixing, holding, and concentrating products. In food processing, common applications include soups, sauces, gravies, jams, syrups, dairy products, confectionery, fillings, starch-based products, meat mixtures, ready meals, plant-based foods, pet food, and similar liquid, semi-liquid, viscous, or particulate products.[1][5]
Related vessel designs are also used in agricultural, pharmaceutical, cosmetic, brewing, and chemical-processing applications. In these settings, similar vessels may be used for mixing, heating, extraction, concentration, ingredient preparation, fermentation support, or other temperature-controlled processes.
