Thipsamai restaurant is the restaurant-specific for Padthai since 1966[1] located on Maha Chai Road, Bangkok, Thailand. In addition, this restaurant is mentioned in michelin guide. The restaurant that you should go to eat Padthai. The restaurant's name comes from the founder's name which is "Thipsamai".

History of Pad Thai[edit]

Pad Thai was created during World War II when the country was experiencing a demand shortage.[2] Prime Minister Pleak Phibunsongkhram is in charge. Prime Minister want to be nationalistic Therefore, there was an idea to create a national dish. Because rice is expensive during the war, he wanted Thai people to turn to eat noodles instead. and use raw materials sourced locally within the country.[3] As a result, kuay tiew phad was born at that time. People began to refer to this dish as "Pad Thai" as time went by. Pad Thai has become well-known due to its distinct flavor and appeal.

History of Thipsamai restaurant[edit]

Back in the time, Thipsamai Padthai Restaurant started from street food with a small stall on the footpath near Pratoopee intersection before the time of World War II. The story of this restaurant begins with a young girl, her name was Samai. Her hometown was in Krathum Baen District, Samut Sakhon. Her family was a farmer, but her mother also sold many types of Thai food and dessert on the boat all along the Phasijaroen canal since she was young until she grew up. Arise from helping her mother sell food and dessert, Ms.Samai had learned to cook food and dessert from her mother’s recipe and the important one that she had learned was Padthai. When the time has passed and she was an adult not a young girl anymore. She met a man named Mr.Chote and she fell in love with him. They got married shortly afterward. Mr.Chote’s hometown was in Maha Chai, Samut Sakhon. So after they got married, Mrs.Samai decided to move out from her hometown and follow her husband to live in Maha Chai. After married, Mrs.Samai started selling Padthai from the recipe that she had got from her mother, which is Padthai sean jun with shrimp paste then wrapped with egg. Mrs.Samai used shrimp of high quality and size so that makes people like her Padthai. Mr.Chote was doing a fishing business at that time. But unfortunately, his business was not going well. He began to lose money and he needed to go out of business. They did not give up, so they decided to move into Bangkok and start a small steed food business. The Padthai stall was on the footpath, which was located at the Pratoopee intersection. They started the business with only old tables and a small old charcoal stove every night. In that time, they sold Padthai just only 1.50 Bath if the egg is added then it was 2 Bath. It did not take a long time for them to achieve a good sale. At that time, there was a government campaign of prime minister Pleak Phibunsongkhram. He encouraged people to consume more noodles because of the high cost of the rice which was a result of the war. One day, the prime minister came and ate Padthai and he liked it so he gave a compliment to Mrs.Samai that “Padthai Pratoopee is the true and authentic taste of PADTHAI”. The business was going well shortly afterward arise from the government’s campaign and the appreciation of the prime minister so they had enough money to rent a nearby shophouse to sell Padthai at night and it receive well feedback from the customers. When they became more flourish, the landlord increased the rental fee charge. Finally, they were forced to move out of the building. Mrs.Samai and Mr.Chote were not given up. They decided to open a Padthai restaurant next to the old shophouse that they rented. With their determination, they can buy the shophouse in 1966 and the oldest Padthai restaurant named “Thipsamai Padthai Pratoopee” has been created.

The Evolution of Thipsamai Padthai Restaurant[edit]

Thipsamai Padthai Restaurant is not always successful. The restaurant had faced deterioration when Mrs.Samai became ill and Mr.Chote had to take care of the business since 1997[4]. At that time, Thailand faced an economic crisis and it affected the business. Since then, the business has been in recession. Until 1st January 2012, Dr.Sikarachat Baisamut who is Mrs.Samai and Mr.Chote’s son succeeded his parents’ business because Mr.Chote was too old to take care of the business. He is the current owner of the restaurant now. When Dr.Sikarachat Baisamut succeeded in his family business, more than half of the employees had resigned. There were only 7 people left because he was quite strict and loved perfection. Dr. Sikarachat Baisamut turned the crisis into an opportunity with his effort and patience. He has been improving the business in every aspect, especially the cleanliness in cooking food, the performance of manpower and the manners of the employees. In the part of the quality, he selected high-quality raw ingredients. Importantly, the flavor of Padthai must be the same as the receipt and the ingredients will be adjusted. Furthermore, there will be flavor checking every day. Moreover, in a part of a place also be improved. An air conditioner was added, but he still preserved the old atmosphere to keep the memory and the history of the restaurant. He also thinks about reducing the time that the customer will spend waiting for food by encouraging customers to stand in a row. These improvements are very successful, which means Thipsamai Padthai Restaurant can stand out again until nowadays.

Menu[edit]

The menu differs depending on the branches. The original restaurant has every menu. But the restaurant at siam paragon has only 2 menu [5]. There is Padthai with shrimp paste and egg, Superb Padthai.

  1. Basic Padthai: Basic padthai is a traditional padthai with dried shrimp and egg. It gives out a delicious palm sugar smell that goes well with the spice and dried shrimp.
  2. Vegetarian Padthai: A vegetarian padthai that is suitable for vegans and vegetarians.
  3. Padthai with shrimp paste and egg: Thipsamai is the origin of Padthai. To obtain both nutritional value and excellent taste, shrimp paste and various Thai herbs were used for seasoning. It also intensifies the flavor of the Pad Thai.
  4. Superb Padthai: Superb padthai is made with long, soft Chan noodles, shrimp paste, and egg wrap. While cooking on a charcoal stove, it is seasoned with specific herbs and fresh deep-sea prawns.
  5. Padthai with shrimp paste fresh deep-sea prawns and egg: This dish is similar to superb padthai. The only difference is that the restaurant adds an egg to the mix and cooks it with the rest of the ingredients. The flavor is unrivaled, and this menu quickly becomes one of the most popular Padthai dishes among Thai and international customers.
  6. Padthai with shrimp paste fresh deep-sea prawns and egg (without noodle): There are no noodles on this Padthai menu. This ideal perfection contains only a blend of shrimp paste, fresh deep-sea prawns, vegetables, and seasoning.
  7. Padthai Song-Krueng: This meal includes shrimp paste, fresh extra-large deep-sea prawns, and sliced squid, among other high-quality ingredients. Then, instead of lime juice, finely garnished with crabmeat and sliced raw mango, creating a tart flavor, it was placed on a special and beautiful platter. You can also choose between Chan noodle and glass noodle, both of which are fantastic. This is a well-known and outstanding dish from this restaurant.

  2. Thipsamai Padthai Sauce: One of the best seller products from Thipsamai is Thipsamai Padthai sauce classic recipe ready to use. Its flavor is very specific. Moreover, there is a Padthai sauce for vegetarians. And there are 3 sizes for Thipsamai Padthai Sauce. They are 100 g, 500 g, and 1000 g.
  3. Thipsamai Sukiyaki Sauce: Thipsamai Sukiyaki Sauce is a homemade product with a deep, mellow flavor that has been properly produced. There are 2 flavors of this sauce. They are original and Cantonese. For original sukiyaki sauce, This sauce is made from garlic, fresh chili, and fermented bean curd. For Cantonese sukiyaki sauce, This sauce is made from garlic, fresh chili, sesame oil, and white sesame.
  4. Thipsamai Sweet Chilli Dipping Sauce: Without the use of preservatives or MSG, Sweet Chilli Dipping Sauce is made using a secret recipe and high-quality natural ingredients, giving it a distinct flavor. This sauce is usually dipped with chicken but you can dip it with anything that you prefer. There are 2 flavors of this sauce. They are original and extra hot.
