History
Thistle was founded in 2013 by Ashwin Cheriyan and Shiri Avnery.[5] The company originally operated as a cold-pressed juice pop-up and on-demand delivery service before transitioning to a direct-to-consumer, ready-to-eat meal subscription model in 2015.[6][7]
Between 2020 and 2022, Thistle expanded its presence across the US, with West Coast coverage spanning between Los Angeles and Seattle, and the addition of a production facility in Burlington, New Jersey grew East Coast service to include all major metropolitan areas including New York, Philadelphia, Boston, Washington D.C., and Atlanta.[4][6][8]
In 2026, expansions were made to include delivery to Denver, Colorado; Salt Lake City, Utah; Minneapolis, Minnesota; Madison, Wisconsin; and Milwaukee, Wisconsin.[9][10]
Services

Thistle claims carbon neutrality for its deliveries through the purchase of carbon offsets from organizations such as Cool Effect, and efforts to minimize and offset food waste are facilitated via partnership with the nonprofit Replate [Cool Effect][Thistle, Celebrating Our Commitment to Sustainability].[18][19] The company also partners with rePurpose Global to reduce plastic pollution.[20]
Research
In 2021, Thistle's meals were utilized in the "Fiber Force" study conducted by researchers at the University of California, Irvine.[21] The peer-reviewed study, published in the journal mSystems, investigated the impact of a high-fiber, whole-food diet on the human gut microbiome, finding that a two-week intervention with the Thistle-sourced meals significantly influenced microbiome composition.[22]
