Tracy L. Scheffler

Dr. Tracy L. Scheffler is an American scientist working as a Professor of Muscle Biology at the University of Florida.

Biography & Education[edit]

Dr. Scheffler grew up in Mendon, Michigan and participated in activities such as 4-H and meat judging in her youth. Her interests in the mechanisms behind things led her to receive a Bachelor's in Animal Science from Michigan State University in 2002, a Master's in Animal Science with a Meat Science specialization from Purdue University in 2005, and a PhD in Muscle Biology and Meat Science from Virginia Tech in 2012.[1] Before working at the University of Florida, she worked in Packaged Meats Quality & Development at Conagra Foods from 2005-2006, and as a Lab Specialist in the Department of Animal and Poultry Sciences at Virginia Tech from 2012-2014.[1]

Dr. Scheffler has been referred as an author or co-author in 30 published articles and has been invited to several research presentations both nationally and internationally[2]. Her primary research interests are optimization of muscle growth in relation to meat quality.[3] Her research has been cited 723 times since 2011, with 204 citations of her paper "Mechanisms controlling pork quality development: The biochemistry controlling postmortem energy metabolism." [4] [5] She has also been published in prestigious journals such as the Journal of Animal Science, Meat Science, and the American Journal of Physiology.[6] [5]
