Yukina is a vegetable grown in the Yamagata region of Japan, the vegetable is said to be rare and its cultivation is influenced significantly by traditions.
Cooking Yukina is typically prepared picked but can also be eaten raw. It is said to have a pungency associated with it. The taste of raw Yukina is sweet.
