Zucchini bread is a type of quick bread, along with banana bread or pumpkin bread [1] because it does not need to be left to rise. In most recipes, zucchini is grated and then mixed into batter.
History
Zucchini is native to Mesoamerica, but it was developed into the fruit[2] we know today in Italy. [3]
Zucchini bread became popular in America during the 1960s and 1970s, along with banana bread, because people thought of it as a healthy dessert.[4]
