Bitterkoekje

A bitterkoekje is a biscuit made from a mixture of ground bitter and sweet almonds, granulated sugar, and egg white.
This mixture is sprayed onto a baking tray and flattened, then baked in an oven. Instead of almonds, the kernels of apricot pits are sometimes used as a cheap alternative.
