Celery Extract

Script error: No such module "AfC submission catcheck".Celery extract is slowly replacing sodium nitrate and sodium Nitrite as a preservative and ingredient in processed foods. This is especially true for food products labeled "organic" or "natural".[1] While the name suggests celery extract may be a more healthy option than artificially created chemical nitrites (used to preserve food to prolong spoiling and discoloring), the actual compound from the celery extract is the same molecule nitrite. Nitrites are classified as possible carcinogens by many health organizations [2] [3]

Companies are trying out new alternatives to preserve meats, perhaps some will truly avoid nitrate compounds instead of mislead consumers into buying something that sounds like a healthier alternative.[4]
