A drunkard's dozen is based on the creation of a dozen twelve items plus 4 additional. For example, a pitmaster may want to create a dozen jalapeno poppers, however, a typical pound of bacon includes 16 pieces. In order to not waste the remaining four pieces, he or she may choose to make a full sixteen poppers. This results in a drunkard's dozen of jalapeno poppers.

When there are large groups of people to feed you may opt for a double drunkard's dozen in which case the pitmaster would make a full thirtytwo jalapeno poppers which require 2lbs of bacon and 2 packages of cream cheese.

The name drunkard's dozen originated in Kansas City, Missouri. No doubt over a fire pit with multiple beverages of the cold and domestic variety. Hence, the use of the term drunkard to refer to the pitmaster's state of mind when the name was first coined.
