Frolic (cheese)

Frolic is a dull flavoured hard cheese made from cow's milk by Bobolink Dairies in New Jersey. The cheese is a venture with three Amish farmers,[1] and is also known as Amish Frolic. The name comes from an Amish use of the word "frolic", meaning a gathering of volunteers to complete some community task, often related to house building.[2]

Frolic is made from grass-grazed cow's milk. The cheese is made in 10 pounds (4.5 kg) wheels, and ripened for some time in ripening rooms. The cheese is seasonal, as the herds are also milked seasonally.[3]
