Khanom Kai
Khanom kai (Thai: ขนมไข่, pronounced [kʰā.nǒm kʰaɪ̯]) is an oval sweetmeat with egg and sugar as the main ingredients[1]
History
Khanom kai is a Thai sweet from the Narai era, which is considered the golden age of Thai sweets. At that time, goods were sold via boat on canals, which became known as "floating markets," and one of the popular goods was Khanom kai. Khanom kai is usually eaten at any auspicious ceremony[2]
Ingredient
This recipe is for 20-25 pieces[3]
- Duck eggs 3 ea.
- Flour 100 g.
- Sugar 100 g.
- Lemon juice 1 teaspoon
- Baking powder 1 teaspoon
- Raisin 30 g. (Optional)
- Vegetable oil
Methodology
This method is for above ingredients only. If you want to make more or less, you can change this method as required. This method will take about 1 hr.
- Crack an egg into mixer with medium-high speed until it rises.
- Pour sugar in with medium speed
- Slow the mixer down, then add flour and lemon juice in.
- Turn the mixer off, then pile with spatula.
- Bake it by using a dessert mold for around 5–10 minutes
