Maiiz Nixtamal is a Canadian business that has pioneered the Nixtamalization process in Canada. Founded by renowned internaltional chef Israel Alvarez Molina, he brought his Mexican heritage and love of authentic tortillas to the Vancouver Island and quickly his tortillias became a stable in the local restaurants and grocery stores.
Maiiz Nixtamal settled in the oldest chinatown in Canada in downtown Victoria. There brand colours of yellow and black can be seen painted on their large stores entry way. Maiiz Nixtamal makes their tortillas from scratch; bringing in organic corn from British Columbia farms and completed the nixtamalization process in house. They then grind the corn with lava rock grinders to make the masa dough that is formed into fresh tortillas.
Maiiz Nixtamal also offers fresh made authentic mexican food and drinks. Items such as tamales, quesidillas, and tacos are fresh made to order. They also have housemade atole; the first on the island to offer the corn based drink.
