Mobay is an American semi-soft goat and sheep milk cheese created by the Carr Valley Cheese Company in La Valle, Wisconsin.[1] This registered original cheese variety is Master Cheesemaker, Sid Cook’s, take on the famous French cheese, Morbier.[2]
Carr Valley Mobay features a layer of sheep milk cheese and a layer of goat milk cheese separated by a layer of grape vine ash and pressed together.[3] The flavor is both delicate and rustic with three different flavor profiles.
