Noam Bilitzer is an American chef and restaurateur. He is the owner and executive chef of MeeshMeesh Mediterranean, a Levantine-focused restaurant in Louisville, Kentucky that was named a finalist for a James Beard Foundation Award in 2025.[1] Bilitzer has appeared on three episodes of the Food Network cooking competition show Chopped (TV series)' between 2018 and 2021, winning the competition once.[1]
Early life and career
Bilitzer graduated from the Institute of Culinary Arts at Eastside High School in 2011, where he earned certifications from the National Restaurant Association and the Florida Restaurant and Lodging Association.[2] He furthered his education at Johnson & Wales University in Charlotte, North Carolina, earning an Associate's Degree in Culinary Arts/Chef Training in 2012.[3]
After culinary school, Bilitzer worked in kitchens across the United States, including South Carolina, Florida, and Massachusetts.[4] His career progressed when he moved to Louisville, Kentucky to join 21c Museum Hotel, where he eventually became the Corporate Chef De Cuisine for the hotel group, working at their restaurant Proof on Main.[5]
Bilitzer gained national recognition in 2018 when he won an episode of the Food Network cooking competition show Chopped (TV series).[6] In 2019 he became the Executive Chef of Red Hog, a butcher shop and restaurant in the Crescent Hill neighborhood of Louisville, Kentucky.[4]
Prior to opening MeeshMeesh, Bilitzer created pop-up dining concepts, including "MeeshMeesh Hummus Bowls & Salatim" at Bourbon Barrel Foods' Theater Kitchen.[7]
MeeshMeesh Mediterranean
Bilitzer opened MeeshMeesh Mediterranean on September 1, 2023, in the Nulu District of Louisville, Kentucky, in a space previously occupied by Wiltshire on Market.[8] The restaurant's name, meaning "apricot" in both Arabic and Hebrew, was chosen for the restaurant's concept.[9] MeeshMeesh serves Levantine cuisine, featuring dishes from Palestine, Jordan, Lebanon, Syria, Israel, and surrounding regions.[10]
Recognition and awards
MeeshMeesh gained recognition shortly after opening. In 2024, Yelp named it the No. 2 Best New Restaurant in the South.[11] In December 2024, Yelp further ranked the restaurant as the No. 3 Best New Restaurant in America.[12]
In January 2025, Bilitzer was named a semifinalist for the James Beard Foundation Award for Best Chef: Southeast.[13] On April 2, 2025, he advanced to become one of five finalists for the award, alongside Sara Bradley of Freight House in Paducah, Kentucky.[14]
Personal life
Bilitzer resides in Louisville, Kentucky.[15]
