Sture Cheese
Sture cheese is a type of Swedish household cheese that has its origins in the so-called Fästemanna cheese from the dairy in Sävsjö in Småland. It is marketed today by Arla.[1]
Etymology
The name of Sture cheese comes from Sten Sture the Younger, who had a hunting castle in Sävsjö. This castle is now depicted in Sävsjö's city coat of arms and on the cheese label.[citation needed]
History
Originally, Sture cheese was manufactured with a fat content of over 60% or 45%. Nowadays[when?] the fat content is 38%. The cheese is matured to heighten its flavour.[citation needed]
In 2011, production was moved from Falkenberg's dairy to Denmark. Since then, the cheese has instead been made from Danish raw milk.[2]
