Alvin Cailan is a Filipino-American chef, author [2] and host of First We Feast’s The Burger Show which airs on YouTube[1] and Hulu. [3] Chef Alvin first grabbed the attention as a trailblazer in the culinary world when he launched the Eggslut food truck in Los Angeles. [4] The food truck was so popular waits streched to two hours long. [4]The truck rapidly became a foodie cult favorite that specialized in affordable egg sandwiches executed with the techniques and innovation of a classically trained, fine dining chef. [5] Cailan opened Eggslut as a pop-up. Wildly successful, Eggslut is now a cornerstone of L.A.’s Grand Central Market with additional locations in Venice, Glendale, and Las Vegas. [6]

Early life

Alvin Cailan grew up in Pico Rivera, California in a Filipino household. [7][4] To keep him out of trouble, Cailan’s parents got him a job washing dishes at a retreat house[4], a kitchen that fed 150 people everyday. [6] By the time he was a senior in high school, Cailan was cooking and rose to kitchen manager. [6]

Education

Alvin at first studied business at California State University. [6] After graduating Alvin worked for a construction company. In a stroke of luck Cailan got a two years severance—money he used to bankroll the culinary career plan of his dreams. [6] He then moved to Oregon and attended the Oregon Culinary Institute. [6]

Career

After culinary school Cailan staged at culinary establishments such as Olympia Provisions, Bouchon, and The French Laundry.[5] He worked for Matthew Lightner's Castagna for 6 months, which he called the hardest 6 months of his life. [6] In 2010 Cailen founded Eggslut with his cousin. [8] [9]It started as a food truck in Los Angeles and took off from there. [9] As of 2020 Eggslut has 8 locations around the world including in Tokyo, London and Kuwait. [10] In 2020, Alvin will have his own cookbook "Amboy: Recipes from the Filipino-American Dream" published by Houghton Mifflin Harcourt. [11][12]
