Bread Ahead Bakery is a British chain of bakery and baking schools in the UK and around the world. The bakery was first established in 2013 by owner Matthew Jones at the London location of Borough Market. By 2014 Bread Ahead had set up their first baking school, providing baking courses. The Bread Ahead bakeries use British sourced ingredients to create their products. Founder, Matthew Jones began his career as a chef in the 1990s and set up his first bakery Flour Power City Bakery in Hoxton. In 2012 Matthew set up a bakery in Borough Market, which is now Bread Ahead Bakery and School. As of 2021, the company operates in three countries and has its head office in London.

Matthew Jones is both the founder and head baker at Bread Ahead[1], who started his career in 1986, working alongside other British chefs such as Shaun Hill, Simon Hopkinson and John Torode in restaurants which include Bibendum, Pont de la Tour and Quaglino’s. After some time in the industry, he eventually became the Head Pastry and Bakery Chef at Mezzo. [2]
After a career in the restaurant and bakery industry which spanned about 25 years, he opened Bread Ahead Bakery in 2013, which supplies fresh produce to customers, local restaurants and delis. By February 2014 a baking school was created to provide baking classes for enthusiasts in London. [3] Soon after, Bread Ahead opened up 6 other bakeries around London[4] including Chelsea & Soho.[5]
The pandemic in 2020 posed some challenges for the company, as wholesale customers such as restaurants and delis were closed and profitable items such as the doughnuts were not selling as much as they did pre-lockdown.[6]Bread Ahead had to reposition itself to keep its shops open and find new platforms for connecting with customers. Bread Ahead opened three new bakeries during lockdown [7]and the bakery school went virtual and offered followers free online tutorials on its Instagram page including doughnut workshops, focaccia-making, chocolate brownies, hot cross buns and more.[8]
After the success of the live baking classes on Instagram during the lockdown, Bread Ahead set up an online baking school in which enthusiasts could learn to bake treats such as a Victoria sponge, focaccia, or other bakery items.[9] By August 2017, Bread Ahead published its first ever cookbook, called the "Baking School: The Bread Ahead Cookbook".[10]
In 2021 Bread Ahead took up a temporary 6 month residency at the Southwark Cathedral Cafe[11] in London; one of the Capital's biggest Cathedrals[12] , serving coffees, breakfast, lunch and snacks; such as sandwiches as well as cakes & pastries, using ingredients from Borough Market traders. [13]Within the same period, Bread Ahead opened up a bakery and baking school at the Dubai Expo 2020 offering novice bakers the chance to learn items such as sourdough breads, pizzad, biscuits & doughnuts and take part in various experiences such as "The Golden Jubilee Doughnut-Making experience"[14]. Later that same year Bread Ahead worked with Karen Lord and Charlie Pattihis to launch its first joint franchise venture In Saudi Arabia.[15]

Most profitable bakery items[edit]
Bread Ahead sell items at their Borough Market bakery which include doughnuts[16]. The company claim to sell about 3000 doughnuts a week for consumption, using flour from Marriages in Chelmsford, and British wheat from Essex and British fruit for jam. They also claim to use these same ingredients to run doughnut making classes which add to the organization's overall profit. Although doughnuts are very profitable for the company, they believe sourdough breads such as a white, brown, raisin or multigrain are the bakery items that provides the company with the most stable profit.
