Chiloso Mexican Bistro is a chain of fast casual restaurants in the Dallas/Fort Worth area specializing in Austin style breakfast tacos, burritos, nachos, salads, and build-your-own-bowls. Chiloso offers breakfast, lunch, and dinner daily. Competitors in the fast-casual Mexican market include Qdoba Mexican Grill, Moe's Southwest Grill, Rubio's Coastal Grill, and Baja Fresh.
Founded by Joe Chavez and David Balli in 2005, Chiloso had one restaurant location in Rockwall, Texas. Today, Chiloso has six locations in six cities and the business will open its seventh restaurant in early 2019.[1]
Menu[edit]
Chiloso's menu is based on three main items: tacos, burritos, and bowls.[2] They have a couple of signature items on the menu as well. After choosing a main item, the customer can add roasted pork, traditional taco meat, rojo chicken, grilled steak, grilled chicken, barbacoa, chorizo, or vegetables. For an extra cost avocado or guacamole can be added as well.
One of the specialty items offered is the grilled avocado. This has become a popular item on the menu and the two seasoned avocado halves that are grilled and placed over queso, rice, and beans can be a healthy option.[3]
Queso is another popular item on the menu at Chiloso. Their queso is made with green chilies, tomatoes and spices that people eat with chips or put on their main item.
Popularity[edit]
Since opening their first location in Rockwall, Texas in 2006, Chiloso has grown to six locations including Rockwall, Wylie, Rowlett, Richardson, Southlake, and Denton, Texas. All of the locations have made a high percentage of profit and a new location in Forney, Texas is set to open in early 2019 to make the 7th location for the business. As well as the large profit margins, Chiloso won the People's Choice award at the Tacolandia festival in Dallas.[4]
Public exposure[edit]
Chiloso has been mentioned by many local and national media outlets such as NBC Dallas/Ft. Worth, Fort Worth Star-Telegram, and Southlake Style. Chiloso can be found full with customers daily at breakfast, lunch, and dinner hours. It is very popular among high school students in the surrounding areas of the different restaurant locations.
