DNA Distillery is a privately owned Australian alcohol company based in Bankstown, NSW, Australia.[3][4][5] The distillery produces and distributes rakia (also known as rakija), a variety of fruit brandy popular in the Balkans.[6][7][8]
Overview
The distillery was opened in 2020 by first generation Macedonian Australians – James Projcevski and Monique Sutevski, whose family emigrated to Australia from North Macedonia (then a part of Yugoslavia).[3] The distillery name is related to the family roots from the Balkans, where the beverage had been cultivated for several generations.[4] The project was launched in the middle of the COVID-19 pandemic.[9] The founders began with replicating traditional family recipes[10][11] while distilling wine from the local Australian Shiraz grapes.[5][4] DNA Distillery is located near Sydney in Bankstown, New South Wales, Australia.[2]
Technology and products
The distillery specializes in producing a Macedonian rakija with the most common types of gold and white grape beverage wherein the percentage of alcohol in it is at 40% ABV.[4] As SBS notes: "In Macedonian, rakija is usually made from grapes. To make a similar drop, the co-founders of DNA Distillery decided to use organic, Shiraz grapes sourced from a winery in the hilltops region of Southern New South Wales."[4][12][3]DNA Distillery rakija is double distilled in small batches using a Polish still.[4] DNA Distillery flavour variants include Classic Rakija, Gold Rakija and Pear Rakija.[13][10]
