Dirk Freyberger (born 2 December 1983 in Nuremberg, Germany) is a German entrepreneur, master butcher (Metzgermeister), meat sommelier, specialist author, and international butchery team captain.[1] He is the Managing Director and Co-Owner of Metzgerei Freyberger, a third-generation artisanal butchery and e-commerce enterprise founded in 1958 in Nuremberg.[2]
Freyberger serves as the Team Captain of the German National Butchers' Team (Butcher Wolfpack), leading them to a World Championship title at the World Butchers' Challenge in 2022 in Sacramento and Vice World Champion in Paris in 2025.[3] He is also the Chairman of Fleischsommelier Deutschland e.V. and author of the culinary craft book SonntagsBBQ.
Early Life and Career
Dirk Freyberger grew up in Nuremberg within his family's butchery business, Metzgerei Freyberger, established in 1958 by Fritz and Margarete Freyberger. After completing his Abitur, he began his apprenticeship as a butcher in 2003 and passed his master's examination (Meisterprüfung) in 2007. In 2017, he earned his qualification as a certified Meat Sommelier and later completed his Masterclass certification as a Grillmaster.
Together with his brother Sven Freyberger, Dirk took over the management of Metzgerei Freyberger, expanding its flagship store in Sperberstraße and opening a second major site in Nuremberg-Katzwang. Under his direction, the traditional butchery expanded into e-commerce, nationwide shipping, corporate catering, and automated 24/7 retail solutions utilizing modern technology and AI integration.[4] In 2014, he established the grilling academy Fleischbotschaft.
International Competitions and Honors
Freyberger initiated the creation of the German National Butchers' Team, competing under the name Butcher Wolfpack, and has served as its Team Captain since its founding.
- World Butchers' Challenge 2022 (Sacramento): Led the German national team to win the overall World Championship title for the first time in history.[5]
- World Butchers' Challenge 2025 (Paris): Led the team to Vice World Champions and won the award for Best Pork Bratwurst. He was also appointed Captain of the WBC All-Star Team.[6]
- Franconian Bratwurst King: Crowned Fränkischer Bratwurstkönig in 2023, 2024, and 2026 at the Franconian Bratwurst Summit.[7]
Freyberger serves on the Council of the World Butchers' Challenge and was appointed Deputy Chair in 2024.
Association Work and Publications
In 2017, Freyberger co-founded Fleischsommelier Deutschland e.V., serving as its 1st Chairman. He is actively involved in vocational education, career initiatives for youth through the platform be butcher, and co-developed public competition formats such as the German and European Butcher Wars.
In 2024, Freyberger authored the specialist barbecue and craft butchery book SonntagsBBQ, published by DFV Fachbuchverlag.[8] He also shares culinary and craft expertise through media channels including YouTube (Freyberger TV) and his podcast Heiße Theke.
