Erbazzone, also known as scarpazzone (Emilian: scarpasòun)[1], is a typical dish of Reggio Emilia, made with chards. In its preparation, the poorer peasant families also used the white stems of the chards (scarpa), hence the dialectal name.[2]

Erbazzone is basically a savoury pie, consisting of a pastry base (foieda), stuffed with a filling of boiled chard leaves (occasionally mixed with boiled spinach), shallot, onion, garlic and a generous amount of Parmigiano-Reggiano. It is then covered with another layer of pastry, sprinkled on top with lardons or bacon bits and pierced with a fork.[1][3]

More recent variations require the use of puff pastry or shortcrust pastry, and ricotta for the filling.

Two other recipes originated from erbazzone: erbazzoncini and chizze salate. The former are squares of pastry, cooked in the oven with the same filling of erbazzone, while the latter are small lozenges of pastry, also equally filled and fried in lard, which are very similar to gnocco fritto.[4]

Erbazzone montanaro[edit]

There is also a version, called Erbazzone Montanaro (Mountain Erbazzone), which is cooked in the Apennine area of Reggio Emilia. The difference is in the filling, in which rice is included[2] Erbazzone montanaro, higher in thickness, is not covered on the top, if not occasionally with egg yolk. This recipe came from the Po Valley and was brought to the mountains by the mondine, which moved there from March to October to work. For every working day, they received one kilogram of rice.[2]
