Gras pìstà

Gras pìstà in the Mantuan dialect (in Italian: grasso pestato, “beaten fat”) is fresh pork fat, beaten with a knife and flavoured with parsley and garlic. In the countryside, farmers used to spread it on toasted slices of polenta or added it to soup. It can also be served on hot focaccia.
