Moeller’s Bakery, established in 1930, is the oldest family-owned and operated bakery in Houston, Texas. [1] The bakery is also known for their use of old-fashioned baking methods and the original recipes from the bakery's founders. Originally established on Almeda Road, the bakery is currently located at 4201 Bellaire Boulevard. Their menu includes cakes, cookies, petit fours, and other baked goods.

History[edit]

Goswin “Gus” Moeller and his brother Raymond started the bakery in 1930. Gus baked the items while Gus’s wife Lucille worked at the front of the store.[2] Sales manager Carol McGraw, an employee for 40 years, said, “there are still some older customers who come in who remember Lucille working the register and how she would give a cookie to each child who walked in the door.” [3]

Subsequent Moeller generations have continued this involvement in the bakery's operations. Gus Moeller's son, D.W. Moeller, took over the business for his father in 1980. [4] And D.W.'s wife, Theresa Moeller, managed the bakery's office and employees. She continued to handle the bakery's bookkeeping as of 2010. And one of the couple's sons, Eric D.W. Moeller, fixes things around the bakery and makes custom parts for its 80-year-old oven.

The bakery was originally established on Almeda Road in the Midtown area in 1930, moved to Rice Village in the 1950's, and then to its current location on Bellaire Boulevard in 1990.

Operations[edit]

Moeller's Bakery is known for its commitment to tradition. Most of the bakery's recipes haven't changed since its opening in 1930 and its bakers have maintained the use of old-fashioned baking methods.

As Houston Chronicle correspondent Jim Murphy stated in 2010: "...all of the cakes, cookies and other goodies are made from scratch, without mixes or preservatives. Cookies and petit fours are cut one at a time, and carrots for the carrot cake are ground by hand in an antique grinder. And everything is baked in a brick-inlaid, porcelain-paneled oven built in 1942 that had to be painstakingly taken apart piece-by-piece, numbered and then reassembled by a Dallas company when the bakery moved from Rice Village to its present location in 1990."[5]

The oven was the last one built by Middleby-Marshall before the company switched over to manufacturing tanks during World War II. It has rotating shelves that make sure that all items are baked evenly. And in keeping with its owners' preference for old-fashioned methods and equipment, the bakery also has no freezer aside from an old lift top model that holds ice. [6]
