Polynesian curry (transliterated in most Polynesian languages as Kale or Kare) is a type of curry prepared in the Polynesian islands. It is prepared with a roux made from curry powder with an assortment of meat and vegetables cooked in a coconut sauce.

The origins of curry in Polynesia are believed to have originated in the Samoan islands. Early Europeans brought curry powder and curry was known in the late 19th century.[1]
