Corana bread

Corana Bread is a type of sourdough, typically with a higher hydration than normal. It is commonly found in southwestern Kentucky and parts of Tennessee.[1]
Corana bread usually uses above an 80% hydration, giving it a slightly springier quality. Some have even compared it to a texture similar to Rye bread. [2]
