FROSISTA is a caviar brand made by Sichuan Runzhao Fisheries Co., Ltd.[1] from China. The company, with its own sturgeon farms and processing facilities, produced 24.1 tonnes of caviar in 2020, making it among the top producers of caviar in the world and shared 8% of global market.[2]

Founded in 2006, Sichuan Runzhao Food Co., Ltd. is a fishery company as a Director unit of Chinese National Aquatic Wildlife Conservation Association(NAWCA) and one of the founders of China Sturgeon Industry Alliance.[3] The caviar processing facility was constructed in 2012 and the trademark FROSISTA was registered in 2015. [1]

Historically, sturgeons were harvested in the Caspian Sea, and their roe sold as caviar mainly by Russia and Iran. Overfishing of sturgeons has led to the near-extinction of several of the species. Since 1998, international trade of all sturgeon species and related products has been regulated under CITES(Convention on International Trade in Endangered Species of Wild Fauna and Flora).[4] Caviar has traditionally been an export sector for Chinese companies, which entered the market en masse after the closure of Iranian and Russian wild-based caviar production due to overfishing.[5]

Sichuan Province's sturgeon farming production ranks among the top in China, and the suitable growth temperature of sturgeon is maintained at 5-20°C all year round. [6]

Several sturgeon farms are built on the eastern edge of Qinghai-Tibetan_Plateau in Sichuan Province, where forest coverage rate reaches 70%, with abundant water resources of good quality, water temperature 4-23℃ year-round,[7] providing high-quality conditions for the growth of sturgeon.

The sex can be determined through using ultrasound after an average of three years of farming, species differ. During this period, both male and female sturgeons are reared, and after sex determination, males are harvested. To harvest the caviar, female fish are monitored through ultrasound to determine if they are ready to spawn and if the roes are ready for harvesting. Females that are near harvest are purged in separate tanks with fresh, colder water, and taken off feed for four to six weeks.[8]

The mature sturgeons are transported in water-filled trucks from the farms to a processing facility in Ya'an, where their egg sac is taken out and hand-rolled over metal grates to seperate roes. Then the roes will be rinsed, picked, graded, and slightly salted, eventually dripped and placed in different sized tins. The whole process is in less than 15 minutes.[4] The remnant part of fish is frozen or smoked and exported mostly to Russia and Kyrgyzstan.
