Kampong Speu palm wine (Khmer: ស្រាត្នោតកំពង់ស្ពឺ, tœ̆k tnaot cuu Kompong Speu) is palm wine produced in the Kampong Speu province, which is known domestically as the province the best palm wine in Cambodia comes from. Traditionally, it is made by spontaneously fermenting palm sap in plastic buckets for a few hours until it reaches 3–6% ABV and consumed before continued fermentation turns the palm wine into vinegar.[1] The Cambodian com­pany Confirel in Kampong Speu industrially manufactures around 20,000 litres of the palm wine a year, exporting around 4,000 to 5,000 bottles of it to the European Union in 2007.[2]
