Yatimcha (Azeri:یتیمچه) is a native food in Azeri regions of Iran and also Azerbaijan country.[1]

The cooking method is slightly different in various regions such as Ardabil or Tabriz.

This food is made from eggplant, tomato, onion, and potato.[1]

The meaning of "Yatimcha" in Azeri language is "without parents"!

And it comes from the fact that there is no meat in the food.[2]

We fry the potatoes separately and add them to the other ingredients that are being peeled and cooked. After heating the ingredients with black pepper and salt, the food is ready. You can also use pumpkin instead of eggplant. Yatimcha is very similar to the French dish of ratatouille.
