Seattle Coffee Works is a third-wave coffee company based in Seattle, in the U.S. state of Washington.[1][2] The business was established in 2006 and operates three coffee shops. In addition to the flagship in downtown, Seattle Coffee Works has outposts in Ballard (Ballard Coffee Works) and South Lake Union (Cascade Coffee Works). A location on Capitol Hill called Capitol Coffee Works opened in 2017 and closed c. 2022. Previously independently owned and operated by Pipo Bui, Oscar García, and roast master Sebastian Simsch, Seattle Coffee Works was acquired by Vibe Coffee Group in 2022.

Seattle Coffee Works has garnered a positive reception and has been deemed one of the best coffee shops in the city, the State of Washington, as well as the nation by various publications and media outlets. In 2011, Andrew Zimmern visited the flagship for a 2012 episode of the Travel Channel series Bizarre Foods America.

Description

The third-wave coffee[3] company Seattle Coffee Works has a flagship store in downtown Seattle and has operated outposts in Ballard, Capitol Hill, and South Lake Union. The company's "Coffee-drinking Man" imagery and signs have been compared to Jonathan Borofsky's Hammering Man.[4]

The downtown location has an express bar and a slow bar.[5] Thrillist has said, "Grab a great espresso at the 'Express Bar', or indulge your inner coffee geek and visit the science lab-esque 'Slow Bar' to observe the skilled baristas as they model various brewing methods."[6] Lonely Planet says, "Amid the frenetic action of downtown is a cafe that truly treats its coffee like wine. Seattle Coffee Works' woody interior is split in two, with a normal walk-up counter and a ‘slow bar’ where staff will brew your coffee to order and discuss its taste notes like enthusiastic oenologists."[7][8]

The Ballard location has been described as "airy".[9]

Seattle Metropolitan has said, "One of the city's original geeky coffee temples—opened a Capitol Hill outpost, where it's less espresso factory and more reading nook; there's even a hanging macrame chair in the back.[10]

Menu

Seattle Metropolitan has said, "Expect a minimal yet on-point approach to coffee, with a handful of espresso and milk drinks plus the standard brewed-to-order slow bar options."[10] Seattle Coffee Works carried baked goods supplied by The London Plane, as of 2017.[11]

History

Established near Seattle's Pike Place Market in 2006,[12] the business was initially operated by Pipo Bui,[13] Oscar García, and roast master Sebastian Simsch.[14][15]

According to Ash Shah of The Daily of the University of Washington, "Seattle Coffee Works began as a pop-up shop in an old T-shirt store in downtown Seattle. Inexperienced and new to the Seattle coffee scene, the owners wanted to create a space where people could try espresso from roasters all over the city... A short four years later, they weren't serving everyone else's coffee; they were roasting their own.".[16]

Seattle Coffee Works has a no-tip policy.[17] In 2021, Inc. magazine's Diana Ransom wrote, "After voluntarily boosting wages to $19 an hour in 2017, up from $12, Simsch says workers -- who now earn at least $22 an hour after annual wage increases -- are generally happier, turnover is nil, and productivity has shot through the roof."[18]

During the COVID-19 pandemic, the company saw business slow[19] and operated via take-out.[20] Seattle Coffee Works also received loans from the Paycheck Protection Program. According to Ransom, "While Simsch had to let 20 staffers go, he transferred many of his remaining 15 workers to the company's new monthly coffee-subscription service and e-commerce coffee sales."[18]

Heather Schmidt is the company's chief executive officer, as of 2021.[21] The business was independently owned[22] until 2022, when Vibe Coffee Group (owner of Victrola Coffee Roasters and Whidbey Coffee) announced plans to acquire all four locations.[23]

Flagship

In 2007, the Daily Journal of Commerce said, "Seattle Coffee Works has opened at 111 Pike St. near Pike Place Market. The cafe combines a museum of Seattle coffee and a tasting center for locally roasted coffees. It has brews from Caffe D'Arte, Caffe Umbria and Vashon Coffee Co. The signature drink is a three shots of espresso served on a silver platter."[24] The flagship store relocated in 2009.[25]

In 2009, Simsch described large groups of Starbucks employees visiting for observation.[26] Andrew Zimmern visited Seattle Coffee Works in 2011 to feature the business in the first season of the Travel Channel's Bizarre Foods America.[27] The episode of him sampling the 2011 Colombia Cup of Excellence, which retails for $100 a pound, aired in 2012.[28] According to Shalini Gujavarty of Eater Seattle, Zimmern considered the visit one of his "top five experiences" in the city.[29]

In 2010, the Los Angeles Times noted the presence of Wi-Fi and 30 electrical outlets for 40 seats at the downtown location.[30] Simsch selected furniture for the flagship,[31] where he hosted public coffee cuppings at no cost, as of 2018.[32] The shop was vandalized in 2020.[33]

Outposts

Outposts have operated as Ballard Coffee Works,[34] Capitol Coffee Works,[35] and Cascade Coffee Works.[36]

The Ballard location opened in March 2012,[37] in a former bank building and Tully's location.[38] The shop was vandalized in 2021.[39]

A third location opened at Broadway and Pike on Capitol Hill in 2017.[40] The coffee shop closed c. 2022, and was replaced by Ben & Esther's Vegan Jewish Deli.[41]

Cascade Coffee Works opened in South Lake Union in 2017.[42] Free coffee was distributed at the grand opening.[43] The coffee shop operates a retail space on the ground floor of a block which has been occupied by Amazon and houses the Troy Laundry Building.[44]

Reception

The Not for Tourists Guide to Seattle has said, "To these guys, making coffee is not work."[45] The guide series has also said of Ballard Coffee Works specifically: "The coffee here definitely works".[46] Writing for The Oregonian, Caroline Cummins said in 2010, "On a busy summer day, its proximity to the popular Pike Place Market can make Seattle Coffee Works feel overwhelmingly touristy." She recommended, "Ignore the out-of-towners and sidle over to the Slow Bar, where you can prop yourself on a stool and sample coffees from around the world, prepared in a variety of ways (pressed, siphoned, etc.)."[47]

Molly Hannon included the Ballard location in Men's Journal's 2011 list of the best coffee shops in the U.S.[48] The magazine's Tyler Coates has also included Ballard Coffee Works in a list of the 40 best coffee shops in the nation.[49] The Pike Street location was deemed the best coffee shop for "tasting (cupping)" by Marriott Hotels & Resorts in 2013.[50] KSTW included Seattle Coffee Works in a 2016 list of the city's "best craft coffee spots".[51] In 2017 and 2019, writers for CNN called Seattle Coffee Works a "solid pick" in overviews of the world's best cities for coffee.[52][53]

Writers for the Seattle Post-Intelligencer included Seattle Coffee Works in 2019 and 2021 lists of the city's nine best places for hot chocolate.[54][55] The business was included in the Daily Hive's 2019 list of 10 "Seattle coffee shops aficionados can't afford to miss",[56] 2020 list of the city's 12 best coffee shops,[57] and 2022 list of seven "perfect places to study" in Seattle.[58] In 2021, Mia Mercado selected Seattle Coffee Works to represent Washington in Eat This, Not That's list of the best coffee shops for each U.S. state.[59] Jen Woo included the business in Time Out Seattle's 2021 overview of the city's best coffee.[60] In Moon Baseball Road Trips (2021), Timothy Malcolm said "the service [at the Pine Street location] is so on point that you'll get your cup within three minutes".[61]

Thrillist has said, "Forget Starbucks. This unpretentious coffeehouse Downtown is a longstanding Seattle mainstay, serving up a variety of blended brews and other buzzy drinks."[6] In 2014, the website's Dan Gentile included Seattle Coffee Works in a list of the 21 best coffee shops in the U.S.[62] He also included the business in a 2015 list of the eight best "coffee cities" in the nation, writing, "Starbucks might be the biggest thing to put Seattle on the map, but any self-respecting coffee snob will look right past it, posting up at the slow bar at Seattle Coffee Works".[63] Thrillist's Naomi Tomky included the company in a 2016 list of "Seattle restaurant chains that should go national" and the downtown location in a 2020 list of the city's best craft coffee shops.[64][65]
